Dining Out: Edge Steakhouse

Edge Steakhouse, Westgate Las Vegas, 3000 Paradise Road
Edge Steakhouse, which opened July 28, is an offshoot of the original that opened in Park City, Utah, in December 2012. Its menu is a mix of traditional steakhouse favorites and other appetizers, side dishes and entrees, some of them offbeat. Signature dishes include a fresh seafood tower and tableside preparations, both reminiscent of old Vegas, and it offers more than 450 varieties of wine. Beginning with the imposing entry, the atmosphere is rich with traditional dark woods. Here's a sample of the menu:
Starters: Alaskan King crabcakes, $18; Silk Road Spicy Shrimp, $16; Kurobuta pork belly and sweet potato gnocchi, $15; seared foie gras, $22; tableside Wagyu tartare, $26; prawn cocktail, $26; seafood tower, $75.
Soups and salads: Lobster bisque, $16; onion soup au gratin, $12; wedge salad, $14; tableside Caesar salad, $12 per person.
Entrees: Chicken under a brick, $28; 48-hour buffalo short ribs, $38; seared jumbo sea scallops, $28; lobster and black truffle risotto, $30; 10-ounce Wagyu Manhattan sirloin, $55; 8-ounce Wagyu rib-eye cap, $70; 6-ounce prime petite filet mignon, $45; 6-ounce Japanese A5 Wagyu eye of rib-eye, $85.
