Best bet for Cajun potato salad is to make your own

Taste of the Town reader Cindi Maciolek asked a few weeks back for a source for Cajun potato salad similar to what she used to find at the deli counter at Albertsons or a recipe for it. Regular reader Ann Brown offered this recipe.

Cajun potato salad

3 pounds red potatoes, boiled in skins, peeled and chopped

1/3 cup Creole mustard

½ teaspoon Cajun spice or Creole seasoning

½ cup diced green pepper

½ cup diced green onion

1/3 cup mayonnaise

1/3 cup sour cream

½ teaspoon sugar

½ cup crumbled cooked bacon

Salt and pepper, to taste

Mix all ingredients and chill for at least three hours (it's better if refrigerated overnight).
