Buffalo Steak
Billy Bob's Steak House
and Saloon, Sam's Town
Here's a special in honor of the National Finals Rodeo: The NFR Buffalo Ribeye Steak is a -- yup -- buffalo steak served with a Dijon demi-glace as part of a dinner ($36). It's only available when the rodeo runs, which means through Dec. 10.
Pork Ribs
Texas de Brazil, Town Square
For a taste of South American cowboy chow, pork ribs are part of the 15 meats served with the churrascaria-style dinner at Texas de Brazil ($26.99 at lunch, $46.99 at dinner).
Pulled Pork
Memphis Championship Barbecue
The pulled pork at Memphis Championship Barbecue is smoked for 18 to 20 hours and served up a whole lot of different ways: by the pound ($10.99), in a dinner ($11.49) or in a sandwich with sides ($7.29 or $8.49).
Prime Rib
Bob Taylor's
Original Ranch House
The smoked boneless prime rib dinner at Bob Taylor's is available in two sizes: 12 ounces ($24.99) and 16 ounces ($28.99), both as part of a dinner. And on Mondays, it's $1 an ounce.
Beef Brisket
Buzz BBQ
Buzz smokes its beef brisket for 18 to 20 hours before serving it up in a dinner ($17) or on a sandwich ($8). Whole smoked briskets also are available ($115).
