Chef John Squitieri listens to his customers. When they asked for specials, he started rotating 50 of them, and several have become permanent. Sautéed tilapia with roasted red potatoes is every Friday. Wednesday is prime rib. Others include ricotta and spinach ravioli with grilled chicken breast, chicken picata, Greek gyro and Benito's beef burrito. All are served overlooking the beautiful championship Desert Pines Golf Course. Among the regular menu entrees are beef or chicken stir-fry, half-pound grilled hamburger and penne pasta with vegetables and chicken. Popular sandwiches, served with homemade fries, potato salad or coleslaw, are chicken Philly, turkey Reuben, California club and lobster salad on croissant. Several large salads are Caesar with chicken, shrimp or steak, raspberry-walnut spinach, shrimp Louie and chopped with salami, turkey, jack cheese, garbanzo beans and sun-dried tomatoes. Featured appetizers are Southwestern chicken chili, guacamole and chips, and potato skins with cheese, bacon and scallions. Breakfast entrees include Texas French toast, 8-ounce steak and eggs, and buttermilk pancakes. Specials are $9.50 and are posted by 8 a.m. and served from 11 a.m. to 4 p.m. Duffer's Bar & Grill is open daily from 6:30 a.m. to 4 p.m. -- Jack Bulavsky
