Steak-grilling success starts with the right cut of meat

When it comes to preparing steak at home, the quality of the beef is an obvious starting point, but sometimes a cook’s options are limited. Dave Zino, executive chef of the Beef Checkoff program of the National Cattlemen’s Beef Association, said one tip is to look for steaks that have the most marbling, the white flecks of fat distributed throughout the meat.

Free meals available for kids this summer

Two programs are offering free meals for kids at 21 locations on weekdays this summer to those ages 2-18. The Culinary Academy of Las Vegas is providing free meals at 19 sites through the federal 2012 Summer Food Service Program. Communities in Schools of Nevada is offering free meals and snacks in collaboration with the U.S. Department of Agriculture, Southern Nevada Housing Authority and Three Square food bank.

Health experts support NYC mayor’s limit on soft drink size

Protests flowed like Coke from a soda fountain after New York Mayor Michael Bloomberg proposed limiting the size of soft drinks sold in the city to 16 ounces or less. But Bloomberg’s gambit shone a spotlight on the link between sugary drinks and obesity. “I really agree with him,” said Joanna Gorman, a registered dietitian at University Medical Center. She isn’t alone.
